1 cup water
3 cups potatoes, cubed
½ cup carrot, sliced
½ cup celery, sliced
¼ cup onion, chopped
1 tsp parsley flakes
½ tsp salt
dash of pepper
2 Tbsp flour
1 ½ cup milk
8 oz Velveeta, cubed
Combine water, potatoes, celery, carrots, onion,
parsley, salt and pepper in a large pot. Bring to a
boil then reduce heat and simmer covered for about
15 minutes or until veggies are tender.
add milk to flour (use a salad dressing shaker if
possible) mixing until blended.
Gradually add milk
mixture to hot veggies, stirring constantly until
mixture boils and thickens.
Add Velveeta and stir
