Family Meal Plan Money Saver Tips




(based on recipe from Family Fun)


2 cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
1 cup sugar
2 eggs at room temperature
1 tsp vanilla extract
2 - 3 medium-large bananas (very ripe!), mashed-  this should equal 1 cup
½ cup sour cream


Preheat oven to 325 degrees.  Spray inside of 5” x 9” loaf pan with cooking spray. 

Mix together the flour, baking powder, baking soda, and salt in a medium bowl. 

 In a larger bowl, cream together the butter and sugar (an electric mixture is preferable for this).  Add the eggs one at a time, mixing well after each one.  Mix in the vanilla extract. 

In a small bowl mix the mashed bananas with the sour cream until well blended. 

Gently mix about 1/3 of the dry ingredients with the butter mixture.  Then gently mix in about half of the banana mixture, another 1/3 of the dry ingredients, the remaining banana mixture, then the remaining dry ingredients. 

Pour the batter into the prepared pan and smooth the top. 

Bake for about 1 hour 10 minutes (until tester inserted into the center comes out clean).  Allow bread to cool in the pan for about 20 minutes, then remove and allow to cool completely before cutting.
