1 can tomato soup
1 small onion, minced
1 garlic clove, minced
¼ cup seasoned bread crumbs
½ tsp basil
¼ tsp each salt and pepper
1 lb ground beef
1 Tbsp vegetable oil
¾ cup milk
Combine ¼ of the tomato soup, onion, garlic,
bread crumbs, eggs, basil, salt and pepper. Add in
ground beef and mix well. Form into meatballs.
Heat oil in a skillet and add the meatballs. Cook
over medium-high heat, turning often until browned
(about 8 – 10 minutes, depending upon the size).
Stir milk into remaining soup and pour over
meatballs. Reduce heat to low, cover skillet and
simmer for about 15 minutes.
Serve over rice,
spaghetti or noodles.
